We
make these sugar cookies at 3 times a year; Easter, Halloween and Christmas. My
kids love making them, especially Avonlea. Her favorite part is decorating and
then eating!
1 2/2 C butter, softened
2 Cups sugar
4 eggs
1 ½ teaspoon vanilla
5 cups flour
2 tsp baking powder
1 tsp salt
1 lemon zest
Cream together butter and sugar until
smooth. Add lemon zest. Beat in eggs and vanilla. Stir (by hand) flour, baking
powder and salt until dough ball forms. Cover and chill dough for a least one
hour or overnight. Preheat oven to 400*. Roll out dough on floured surface and
cut out into favorite shapes. Place cookies 1 inch apart on an ungreased sheet.
Bake 6-8 minutes. Cool.
