Cameron’s Carrot Cake

Cameron doesn’t bake much, but he will take complete credit whenever this cake is made. He mastered this recipe one Easter and makes it now whenever he wants to bake something nice for his Mom.

 

3 eggs beaten

1 C oil

2 C sugar

2 C Flour

2 tsp. baking soda

2 tsp. cinnamon

2 tsp vanilla

1 tsp salt

1 small package coconut

2 Cup raw shredded carrots

1 small can crushed pineapple

 

Mix all ingredients together. Bake at 350 for 50 minutes. Let cool and frost with cream cheese frosting recipe.

 

Frosting

½ butter

8 oz cream cheese softened

1 Box of powdered sugar or half a bag

1 tsp vanilla

Cream all together and add more sugar to taste.
