I got this recipe from a friend before I went to college. I used
it a Ricks with great success. Tyler says it was this recipe and my pancake
recipe that helped win him over. It is still a hit at our house, only now we
have to double the recipe.
½ c. butter melted
1 c. sugar
1 tsp. vanilla
2 eggs
½ c. flour
⅓ C. cocoa
¼ tsp. baking powder
¼ tsp. salt
Heat oven to 350°. Grease 9 inch square baking pan. Stir
together butter, sugar, vanilla. Add eggs and beat well. Stir together flour,
cocoa, baking powder, and salt; add to egg mixture and beat until blended. Stir
in nuts. Spread batter into pan. Bake 20-25 minutes.
Frosting
3 Tbs. butter softened
3 Tbs. cocoa
1 Tbs. light corn syrup or honey
½ tsp. vanilla
1 c. powdered sugar
1 Tbs. milk
Beat butter, cocoa, corn syrup, vanilla, powdered sugar and milk
until smooth. Add additional milk ½ tsp at a time if needed.
