Chicken and Dumplings

According to Cameron, this is the only way Chicken and Dumplings should be eaten.


1 chicken cut into pieces and skinned.
1 medium onion cut into wedges
1/2 tsp sage or marjoram
1 bay leaf
1 cup sliced celery
1 cup sliced carrots

Place chicken in large pot, add onion,
sage, bay leaf and 3/4 tsp salt and 1/4 tsp pepper, add 3 cups of water. Bring to boil and reduce heat. Simmer covered for 25 min. Remove lid and add vegetables and adjust chicken on top of vegetables. Using large spoon place dumplings on top of chicken and out of the water. Cover with lid and simmer for 25 mins. Dumplings should be light and fluffy.

Dumplings

2 cups flour
2 tsp baking powder
1 tsp salt
4 T shorting
1 cup butter milk

Mix dry ingredients and cut in
shorting until it resemble coarse
crumbs. Stir in butter milk until
moistened.
