1 pound ground sausage
8 slices whole-grain bread, cut into cubes
1 1/2 cups grated cheddar cheese
6 eggs
1 cup milk
1/2 tsp salt
Freshly ground pepper
In a skillet, brown ground sausage until there is no more pink.
Drain the fat. Pour into a large mixing bowl. Add bread cubes and cheese. Toss
well. In a medium bowl beat eggs until fluffy and well scrambled. Add milk,
salt and pepper. Pour over bread mixture. Stir well. Pour all of it into a
9x13-inch pan, sprayed with a non-stick spray. Cover with foil and place in the
refrigerator for 4 hours or more. (I usually make this the night before and let
it rest in the fridge over night.) Remove foil. Place in a cold oven. Turn oven
on to 350. Bake for 30 - 45 minutes, until eggs are set. My kids love this with
syrup poured all over it.
