Crepes

Melissa Coon ~from Joy of Cooking

Every Saturday morning breakfast at our house our favorite because of our Saturday crepe tradition. These crepes are smooth as silk. Our favorite toppings include fresh fruit (strawberries, raspberries, blackberries, bananas, and blueberries); real whip cream, powdered sugar, and cinnamon sugar. These are good enough that some of us like to just eat one plain.

X5 (for a family of 8)

Sift:

3 3 /4 cups flour

2 1/2 tsp. salt

5 tsp. baking powder

5/8 cup powdered sugar

Beat and Add:

10 eggs

3 1/3 cup milk

2 2/3 cup water

2 1/2 tsp. vanilla

Make a well in the sifted ingredients. Pour in the liquid ingredients. Mix on low with an electric beater. Cook on a hot griddle.
